I wrote this recipe to celebrate Traeger Day 2021. While Mac and Cheese is a classic BBQ pairing side, the charred peppers, bacon, and smoker finish take it to the next level. One major feature of this recipe is you don’t have to make a roux for the sauce. First you’ll boil the macaroni, char the peppers, and cook the bacon. Then you’ll stir together the sauce and cheeses and bake it until bubbly and golden.
