I don’t know about you normal people but I could drink peanut sauce. Peanut sauce screams summer grilling season. It’s easy to whip together and is delicious with a variety of grilled meats and veggies. But here I’m cooking up the classic and beloved chicken satay.
For the chicken you’ll first create a delicious marinade. Submerge the chicken and allow it to sit for at least two hours. Skewer and grill for about 4 minutes each side. This is grilling hot and fast so you get beautiful grill marks and char on the chicken, but it’s still juicy and tender inside.
The peanut sauce has a number of ingredients but is very easy to assemble and you can make it ahead of time. If serving the same day, I allow it to sit covered at room temperature. To serve the sauce, either place in a bowl for dipping or thin the sauce out with a little more water so you can drizzle it over the meat on a platter.
I like to serve this with a chilled fresh salad, such as a vinegary cucumber salad. Another side would be a cold noodle dish.Print
